I was struck by inspiration on the way home from work the
other night. Before I left that day I
had taken some ground chicken out of the freezer, unsure of what to make. Then it hit me. Meatballs, but I wanted to make them with a
lot of flavor, so what to do….I have fresh parsley….pasta sounds good too..this
lead to the creation of the Chicken Parm Meatball
What you will need:
1 lb of ground chicken
¼ cup of parsley, chopped (fresh or dried)
½ cup of bread crumbs (Italian Seasoned*)
½ cup of shredded mozzarella cheese
¼ cup of parmesan cheese
Optional Ingredients:
3 tbsp of diced onion
2 cloves of minced garlic
* if you don’t have Italian seasoned bread crumbs, just add
2 tsp of Italian seasoning to plain
How to do it:
Preheat your oven to 350 degrees; line a cookie sheet with
foil. Add all of the ingredients to a
medium sized mixing bowl and work them together with your hands. Form the meat into 1 to 1 ½ inches balls and
place on cookie sheet. Bake for 30
minutes at 350 degrees.
Serving Ideas:
Serve with pasta and tomato sauce.
Serve with a side of flavored rice and vegetable.
Serve with just a salad.
