What to Make for Dinner: Stuffed Peppers

Another yummy Fall comfort food recipe. 



The recipe below is that I grew up with my Mom making, I was surprised when talking to a friend the other day that her Mom, and now her, make them a completely different way.  I love it, and that recipe sounds pretty good, so I've included instructions for both.

Here is What you Need:

2 - green peppers, or any other color peppers
1 lb -  ground beef, you can also turkey or 1/2 ground beef, 1/2 italian sausage
1/4 cup - of parmesan cheese
2 cloves of minced garlic
1/4 - cup of finely diced white onion
3- 4 - tablespoons of fresh (or dried) parsley
1/4 - cup of italian bread crumbs, or plain bread with 3 tablespoons of italian seasoning
1 - egg
1 - 15 oz can of tomato sauce

Optional ingredients:

1/4 cup of shredded cheese (cheddar or pepper jack)
1/2 cup of cooked rice

Here is how you do it:

Clean and split your peppers, you can also clean and core them (you will need 4 peppers), set aside.



Pre-heat your oven to 400 degrees.

Add all of the other ingredients (expect tomato sauce) to a bowl, and mix together.  Shape meat into a ball, and add to pepper.  Place in a baking dish.   Cover with tomato sauce.



Bake for 45 mins.




The best thing about this recipe is you can serve these with just about anything; Pasta, potatoes, Rice
