Is my Green Showing????

Hope that everyone had a great St. Patrick's Day!  Our celebrations have calmed down alittle bit over the years, but we had a nice time.  For me it's become all about the food....



Irish Nachoes


These are too easy to make.  Start with a bag of waffle fries, and 3/4 lb of cooked lean ground beef.  Bake your fries, when they are done, smother in shredded cheese, add the ground beef, smother in cheese again, pop them back in the oven for about 5 mins.  Finish off with diced tomatoes, sour cream and green onions. 


My somewhat Irish Grandmother, would probably not be happy that I don't care so much for the corned beef and cabbage.  I'm not opposed at all to the cabbage or the potatoes, it's the corned beef I can't take.  So I made this instead....

Today I grateful for....

...the guys at the tire place that found the problem with my tire (something about a broken belt and air pocket that could have caused a blowout on the highway)

...for the tire place, who did not have a replacement tire, but found a store close that did (and put on my spare so I could get there)

...my Hubby talking me into getting the protection plan on my new set of tires 6 months ago (free new tire!)

...the wonderful lady at the Walmart (my eye doctor was closed) eye care center, who fixed my frames for free

...for the coupon that helped me pay $2.08 for my lunch, instead of $12.45

...Redbox had a copy of the Hangover II (for date night!) and Footloose (for me!)

...that I remember to put the book I'm reading in my purse, it would have been a long boring day without it


It's been an interesting day, going to relax and watch my Buckeyes...

That's a Spicy Meatball

I just posted a new recipe of the week and I think it's one you are really going to like.

Spicy Chicken Meatball Skillet

It's a good one, because you can make the meatballs up the day before and just heat them up with the sauce.  It's something alittle different from your average meatball.

Cake Popped

In preparation for my cousin's bridal shower I have been practicing a couple of things.  I had wanted to try and make these and now I had a reason.

In some ways it was easier than I thought, it others it was harder (I am not so good at the dipping part.)

What you need:


1 - cake mix, any kind, I highly re command the strawberry it was excellent
1 - can of frosting, I guess that you can make your own
1 - bag of candy melts, I went with white, but any color
toothpicks
sprinkles to decorate

Bake your cake and let it cool.


Then you will crumble your cake, I think it's best to work in sections.

Add your frosting, and mix.


Prep a cookie sheet with wax paper, form them stick them in the freezer (Big Thanks to my friend Lori for that tip!)




I left mine in there overnight, it probably only needs a couple of hours.


Melt your candy (I do not recommend the microwave method - do not ask why.)


You are ready to dip, so for those of you that make buckeyes, this mixture is alittle thicker and not as easy.  Stick in a toothpick and dip, coating the entire ball.  Once your 'pop' is coated sprinkle with your sprinkle of choice.



I popped mine back in the freezer to help them set-up alittle.

One cake mix should yield about 36 balls/pops.

Strange Days Indeed

Did anyone else have a crazy week?  Mine seemed to strange in every way it could be. 

It all started last Sunday.  Because Sunday was the Daytona 500, I had worked all day Sunday to make sure that house was clean, the laundry was done, all I would have to was keep us in snacks (created only during cautions) and we were all set for the week.  Well, it was a rain out, first time they ever postponed for rain.  So, that left me with nothing to do.  That never happens, so I kinda just watched tv, and played on the internet.  Oh, and I did this.


What is that?  That's 3 green onions in a glass of water on my window sill (please disregard the dust).  Appartenly, you can re-grown them.  I was experimenting (and bored, guess I could have dusted.)

The race was re-scheduled for noon on Monday, so I spent 15 minutes on Sunday night setting 12 DVR reminders (because apparent our Fox channel only shows 1/2 shows during the day.)  I get to work on Monday and they announce the race will be Monday night (like it was going to be anyway at my house).  Awesome Monday night racing under the lights in Daytona.  I called Hubby and put him in charge of dinner (fried chicken, JoJo's, and chocolate chip cookies - don't panic he did make that, he picked that up.) 

When I get home from work, there is a box with a can of tomatoes waiting for me.  It was strange, this was the way that Red Gold told me one of my recipes would be featured on recipe books attached to cans of tomatoes.  Pretty cool, pretty neat notification process.




So we settle in and enjoyed the race and with 40 laps left we were feeling like good, like we wouldn't have to be up until midnight.  Then this happened....




This is the first time I have ever seen anything like this.  Luckily, everyone walked away.  But this caused a 2 hour plus delay for clean-up, twitter (follow me @cyndic88) was blowing up.  I could not take my eyes off the clean up (so much Tide) that I wasted two hours. So, turns out we didn't make mid-night, but we were pretty close.  Tuesday morning came alittle early. 

Tuesday was pretty typically, expect for it was the first day of lay-offs that would last all week, so I guess it was alittle stressful.

Wednesday was leap-day, and the we were schedule to head to Evanston, to see our Buckeyes take on the Wildcats.  The weather was beautiful and in the 50's when I left for work.  It was snowing when I was coming home.  It took us forever to get there, luckily we had left early just in case.  By the time we got there we were both alitte crabby, and starving.  We decided that it was probably a good idea to grab something to eat before we hauled ourselves to our upper level seats, so we get in line.

Me (to hubby): What do you want?
Hubby (to Me): I don't know, I have to see what they have first?

Really (see it still bothers me), it's a sports arena, they have hot dogs and nachos (his usual), this lead to alittle quarrel while we were in line and then this happened. 


Yep, the entire team walked past us (complete with high 5's) did alittle huddle and ran out to the floor.  Then we ordered hot dogs and climbed the stairs.  It was a pretty good game with Ohio State leading most of the game, and then Northwestern making a run at the end. Which lead to an earthquake like shaking of the wooden bleachers we sat on all night.  I really thought that was the end of me.


So, another late night.  Great.  Thursday morning sucked too.

Missed a class reunion call on Thursday night, because something at work took about 3 hours longer than it should have.

I finally feel like things out back on track on Friday.  Friday night I checked on my onions.


Apparently, it works and it works fast!
