Sunday Dinner: Chicken Pot Pie






Today, and for the next few days, it is going to be really cold at my house.  That's why this is the perfect Sunday Dinner for today.  This is one of those, warms the whole house up dinners.  Let's jump right in.

Turkey Pot Pie 

2 TBSP of butter
2 TBSP of flour
1/2 cup of half - n - half
1 1/4  cup of milk
salt and pepper to taste
1 tsp of dried thyme (you can also use fresh)
3 cups of partial cooked vegetables (potatoes, carrots, peas)
2 cups of cooked chicken (I cheat and use rotisserie chicken)
1 sheet of puff pastry
2 TBSP of melted butter
1 TBSP of chopped parsley 

The first thing to do, is lay out the puff pastry so that it thaws.  Next, peel and chop your vegetables.  They should be par-boiled for about 5 minutes before they are added to the pot pie.  Shredd the cooked chicken.

In a deep skillet, melt the butter, add the flour, mix until a paste, slowly add the half and half and milk, stirring until it comes to a boil.  Add the salt, pepper and thyme.  



Assemble everything in a 9x13 baker, top with the puff pastry, cover with melted butter and sprinkle with parsley.  

Bake at 350 for 30 mins.
