Not Taco Tuesday, Enchilada Tuesday

I really like the sound of Enchilada Tuesday.  I found this delicious recipe at The Chunky Chef,  please check out here website, so much good stuff.  Now I will fully admit that I did not make homemade enchilada sauce as her recipe calls for, I used canned (I know, the horror) and it was still delicious, I can only imagine if I had used the homemade.

This checks all the weeknight dinner requirements.
