King Coffee Cake
I was looking for something cute to take into work for Mardi Gras this week.
It's my favorite coffee cake all dressed up for Fat Tuesday.
Start by combining the following in medium bowl.
2 1/4 cups flour
1 TBSP of baking powder
3/4 tsp of baking soda
3/4 tsp of salt
In a small bowl, mix together, set aside.
1/2 cups brown sugar
2 TBSP of butter
2 tsp of cinnamon
Using a bundt pan, spray it with non stick spray and lightly flour it.
Preheat the oven to 350.
In your stand mixer bowl, mix together on medium the following.
3/4 cup of softened butter
1 1/4 cups of sugar
Once combined, add 3 eggs one at a time, and 1 tsp of vanilla.
Next, add 1/3 of the flour, than 1/2 cup of sour cream, alternating, until all the flour is used and you have added 1 1/2 cups of sour cream.
Add 1/2 of the batter to the bundt pan, next add the cinnamon mixture as a filling and top with the remaining batter.
Bake for 50 minutes or until a cake tester comes out clean.
Once it comes out of the oven remove it from the pan, but using a wire rack on top of the pan, then flip.
Let it cool.
To make the icing, combine the following in your stand mixer bowl:
2 cups of powered sugar
3 TBSP of half and half or milk
1 tsp of vanilla
Mix until it's pourable.
Drizzle the cake with icing and then, cover in colored sugar sprinkles. Let the icing dry.
